Chef Thomas Metzler is from Vorarlberg, Austria where he grew up cooking with his grandparents. Spotting potential early on, his uncle suggested he apprentice at a local restaurant. There, he fell in love with the art of cooking and went on to graduate culinary school, Schloss Hofen in Lochau. He studied music in the UK before moving to the United States and joining the Sargasso team. Chef Metzler’s unique perspective yields creative dishes inspired by his European roots and local ingredients.
Dave grew up in French Creek, W.Va. and started cooking as a teenage vegetarian seeking more dietary variety than mashed potatoes and green beans can provide. Dave got his first gig working in a professional kitchen as a pizza cook in Portland but eventually his love of the mountains brought him home. He cooked in Morgantown for eight years before landing at Sargasso. Dave’s passions are eclectic as is his food. His understanding of the world’s bright spices makes him a truly unique talent.
