Chef Dave Halterman has chosen to explore the rugged and rustic region of northwest France, specifically Normandy, Brittany and the Loire for this month's Chef's Dinner. Inspired by the cooler fall weather, Chef Halterman invites you to find comfort in the rich and savory flavors of this region. The cuisine of Normandy is a reflection of the abundance of its farms and orchards merged with the bounty of the sea.
Brittany is famous for its buckwheat crepes and hard cider, also in season locally. This month's Chef's Dinner will source several local, seasonal ingredients to create iconic dishes from afar.
